Sesame Slaw with Edamame

Ingredients

Sesame Dressing

  • 2 Tbsp neutral salad oil
  • 1 Tbsp rice vinegar
  • 3 Tbsp soy sauce
  • ½ Tbsp toasted sesame oil
  • Tbsp brown sugar
  • 1 tsp grated fresh ginger
  • ½ Tbsp sesame seeds

Slaw

  • 6 cups shredded red cabbage
  • 1 large carrot
  • 1 red bell pepper
  • ½ bunch green onion
  • 1 cup frozen shelled edamame

Instructions

  1. Prepare the dressing by combining all dressing ingredients in a jar and shaking until mixed.
  2. Finely shred the cabbage, shred the carrot, dice the bell pepper, and slice the green onion.
  3. Cook the edamame according to package instructions.
  4. Combine all vegetables in a large bowl and add about half of the dressing.
  5. Toss the salad until everything is coated and adjust the dressing to taste.
  6. Serve immediately or refrigerate until ready to serve.
