Apple Cranberry Pie

Ingredients

The filling

  • 3 pounds baking apples, cored and sliced into ½-inch slices
  • ½ cup cranberries
  • ½ cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt

The crust

  • 1 double pie crust store-bought or homemade

Instructions

  1. Prepare the pie crust a day in advance to allow it to rest.
  2. In a bowl, mix together the sliced apples, cranberries, brown sugar, cornstarch, vanilla extract, and salt.
  3. Roll out the first pie crust to a 13-inch circle and place it in a 9-inch pie dish.
  4. Roll out the second pie crust and create a topping of your choice.
  5. Chill the pie in the freezer for about 30 minutes to firm up the crust.
  6. Preheat the oven to 400°F and brush the top of the pie with egg wash.
  7. Bake for 30 minutes, then reduce the temperature to 350°F and bake for an additional 30 minutes.
  8. Allow the pie to cool for at least 30 minutes before serving.
