Ingredients

Crust

  • 1 recipe Homemade Pie Crust or All Butter Pie Crust (makes 2 crusts)
  • extra all-purpose flour for work surface, hands, and rolling pin
  • 1 large egg (beaten with 1 Tablespoon milk for egg wash)

Filling

  • 5 cups peeled and chopped apples (about 600g)
  • 1 cup fresh or frozen cranberries (do not thaw)
  • ½ cup granulated sugar (100g)
  • 2 Tablespoons cornstarch (14g)
  • ½ teaspoon orange zest
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg
  • 1 Tablespoon cold unsalted butter (cut into small cubes, 14g)

Instructions

  1. Prepare the pie crust recipe through step 5.
  2. In a mixing bowl, combine apples, cranberries, sugar, cornstarch, orange zest, cinnamon, allspice, and nutmeg.
  3. Line a half sheet pan with parchment paper or a silicone mat.
  4. Roll out the bottom pie crust into a rectangle about 10x14 inches.
  5. Transfer the rolled dough to the lined pan.
  6. Tightly pile the filling onto the dough, leaving a 1.5-inch border, and dot with butter.
  7. Roll out the second pie dough for the top crust, and cut into strips for a lattice top or drape it over for a full crust.
  8. Seal the edges by folding excess dough and pinching together.
  9. Brush the top with egg wash and refrigerate for 15 minutes.
  10. Preheat the oven to 375°F (190°C).
  11. Bake for 45-55 minutes until golden brown and juices are bubbling.
  12. Cool for 5 minutes before slicing and serving.
