Ingredients

The crust

  • 1 box refrigerated pie crusts (14.1 oz)

The topping

  • cup granulated sugar
  • cup packed light-brown sugar
  • 1 cup quick oats
  • ½ cup all-purpose flour
  • ¼ tsp salt
  • ½ cup unsalted butter, chilled and diced

The filling

  • cup granulated sugar
  • cup packed light brown sugar
  • 3 Tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • Tbsp fresh lemon juice
  • 4 lbs peeled, cored and thinly sliced crisp apples

The glaze (optional)

  • 1 cup powdered sugar
  • 2 Tbsp half and half

Instructions

  1. Preheat the oven to 425°F.
  2. Roll out the pie crust and fit it into a jelly roll pan.
  3. Chill the crust until ready to fill.
  4. Prepare the crumb topping by mixing sugars, oats, flour, and salt, then cutting in the butter until crumbly.
  5. Refrigerate the topping.
  6. Make the apple filling by whisking together sugars, flour, cinnamon, nutmeg, and salt.
  7. Toss the sliced apples with lemon juice and then with the sugar mixture.
  8. Assemble the pie by spreading the apple filling over the crust and topping it with the crumb mixture.
  9. Bake for 33-38 minutes until the apples are tender.
  10. Let the pie cool slightly before serving, optionally drizzling with glaze or serving with vanilla ice cream.
