Ingredients

The crust

  • 4 cups all-purpose flour
  • teaspoons salt
  • 1 teaspoon granulated sugar
  • cups unsalted butter, very cold and cubed
  • ¾ cup very cold ice water
  • 1 large egg (for egg wash)
  • 1 Tablespoon milk (for egg wash)
  • to taste none coarse sugar (optional, for sprinkling on top)

The filling

  • 10 cups peeled and chopped apples (about 4 – 5 lbs)
  • cup granulated sugar
  • ¼ cup all-purpose flour
  • 2 Tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

The glaze

  • ¾ cup confectioners’ sugar
  • 2 Tablespoons pure maple syrup
  • to thin none milk or heavy cream (a couple teaspoons)

Instructions

  1. Prepare the pie crust by mixing flour, salt, and sugar, then cutting in the cold butter until crumbly.
  2. Add cold water gradually until the dough forms, then refrigerate for at least 2 hours.
  3. Mix all filling ingredients in a large bowl and set aside.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out one disc of dough into an 18x13-inch rectangle and fit it into a 10x15-inch jelly roll pan.
  6. Spread the apple filling evenly over the crust.
  7. Roll out the second disc of dough and place it over the filling, sealing the edges.
  8. Cut slits in the top crust and brush with egg wash, then sprinkle with coarse sugar.
  9. Bake for 40-46 minutes until golden brown and bubbly.
  10. Cool on a wire rack, then prepare the glaze and drizzle it over the pie before serving.
