Ingredients

The cookies

  • 1 and 1/4 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • ¾ cup creamy peanut butter
  • 1 teaspoon pure vanilla extract
  • 20 pieces Miniature Peanut Butter Cups

The drizzle

  • 1 cup semi-sweet chocolate chips
  • 2 teaspoons creamy peanut butter

Instructions

  1. Whisk together flour, baking soda, and salt in a bowl and set aside.
  2. In another bowl, cream together butter, brown sugar, and granulated sugar until combined.
  3. Beat in peanut butter, egg, and vanilla until smooth.
  4. Gradually mix in the dry ingredients until a dough forms.
  5. Cover the dough and chill for 1-2 hours.
  6. Preheat the oven to 350°F (177°C).
  7. Roll 1 tablespoon of dough into a ball, press a peanut butter cup into it, and cover with another ball of dough.
  8. Seal the edges and smooth the ball.
  9. Bake for 12-13 minutes until lightly browned.
  10. Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.
  11. Melt chocolate chips and peanut butter together and drizzle over cooled cookies.
