Instructions
- Whisk together flour, baking soda, and salt in a bowl and set aside.
- In another bowl, cream together butter, brown sugar, and granulated sugar until combined.
- Beat in peanut butter, egg, and vanilla until smooth.
- Gradually mix in the dry ingredients until a dough forms.
- Cover the dough and chill for 1-2 hours.
- Preheat the oven to 350°F (177°C).
- Roll 1 tablespoon of dough into a ball, press a peanut butter cup into it, and cover with another ball of dough.
- Seal the edges and smooth the ball.
- Bake for 12-13 minutes until lightly browned.
- Allow to cool on the baking sheet for 10 minutes before transferring to a wire rack.
- Melt chocolate chips and peanut butter together and drizzle over cooled cookies.
