Peanut Butter Filling

Instructions
- Preheat the oven to 375°F and line baking sheets with parchment paper.
- In a mixer, beat together butter, peanut butter, granulated sugar, brown sugar, baking soda, and salt until light and fluffy.
- Add vanilla, egg, and egg yolk, mixing well.
- Incorporate flour and cocoa powder until no dry streaks remain.
- For the filling, mix peanut butter and powdered sugar until smooth.
- Scoop chocolate dough, flatten it, and place a scoop of filling in the center.
- Wrap the dough around the filling and roll into a smooth ball.
- Roll each cookie in granulated sugar and place on the baking sheets.
- Flatten each cookie slightly with a greased glass.
- Bake for 7 to 9 minutes, until lightly set, then cool on a wire rack.
