Instructions
- Whisk flour, baking soda, and salt in a bowl and set aside.
- Cream butter, brown sugar, and granulated sugar in a large bowl until combined.
- Beat in peanut butter, egg, and vanilla extract until smooth.
- Gradually mix in the dry ingredients until combined.
- Chill the cookie dough for at least 1 hour.
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Form cookie balls and roll in granulated sugar, placing them on the baking sheets.
- Bake for 11-13 minutes until soft, then cool for 5 minutes.
- Press a peanut butter cup into the center of each cookie and freeze until set.
