Ingredients

The cookie dough

  • 1 and ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • ½ cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • ¾ cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Topping

  • ½ cup granulated sugar
  • 24 pieces Reese’s Miniature Peanut Butter Cups

Instructions

  1. Whisk flour, baking soda, and salt in a bowl and set aside.
  2. Cream butter, brown sugar, and granulated sugar in a large bowl until combined.
  3. Beat in peanut butter, egg, and vanilla extract until smooth.
  4. Gradually mix in the dry ingredients until combined.
  5. Chill the cookie dough for at least 1 hour.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Form cookie balls and roll in granulated sugar, placing them on the baking sheets.
  8. Bake for 11-13 minutes until soft, then cool for 5 minutes.
  9. Press a peanut butter cup into the center of each cookie and freeze until set.
