Instructions
- Preheat the oven to 350°F and line baking sheets with parchment paper or silicone mats.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt, then set aside.
- In a stand mixer, beat the butter, cream cheese, and sugars until light and fluffy, about 2 minutes.
- Add the egg and egg yolk, then the vanilla, and mix to combine.
- Gradually add the flour mixture on low speed, then mix in the peanut butter cups until just combined.
- Scoop rounded tablespoons of dough onto the prepared baking sheets.
- Bake for 10-14 minutes until golden, then press mini marshmallows into each cookie immediately after removing from the oven.
- Cool on baking sheets for 2-3 minutes before transferring to a wire rack to cool completely.
