Ingredients

The cookie dough

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 sticks butter, softened to room temperature
  • ¼ cup full-fat cream cheese
  • ½ cup white sugar
  • 1 cup packed dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 cups chopped Reese’s Peanut Butter Cups or Reese’s Peanut Butter Minis

The toppings

  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt, then set aside.
  3. In a stand mixer, beat the butter, cream cheese, and sugars until light and fluffy, about 2 minutes.
  4. Add the egg and egg yolk, then the vanilla, and mix to combine.
  5. Gradually add the flour mixture on low speed, then mix in the peanut butter cups until just combined.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheets.
  7. Bake for 10-14 minutes until golden, then press mini marshmallows into each cookie immediately after removing from the oven.
  8. Cool on baking sheets for 2-3 minutes before transferring to a wire rack to cool completely.
