Peanut Butter S'mores Cookies

Instructions
- Combine flour, baking powder, baking soda, and salt in a medium bowl and set aside.
- In a large bowl, mix butter, sugar, honey, and vanilla until light and pale, then add peanut butter and mix for another minute.
- Slowly add eggs, beat until combined, then mix on medium speed for 2 minutes.
- Reduce speed to low, add dry ingredients, and mix until the dough forms.
- Fold in chocolate chips and marshmallows until incorporated.
- Cover the bowl with plastic wrap and refrigerate for 1 to 3 hours.
- Preheat the oven to 365°F and line baking trays with parchment paper.
- Scoop dough into balls about 2 tablespoons each, smooth them out, and add mini marshmallows and chocolate chips on top.
- Space the dough balls 3 inches apart on the trays.
- Bake for 14 to 15 minutes until golden on the edges.
- Cool on trays for 5 minutes before transferring to a wire rack.
