Ingredients

The cookie dough

  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 each egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ½ tsp salt

The mix-ins

  • 1 cup semisweet or dark chocolate chips
  • 1 cup toffee chips

Instructions

  1. Preheat the oven to 350°F.
  2. Cream together the butter and sugars until light and fluffy, then add the egg and vanilla and mix well.
  3. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt, then mix into the dough until combined.
  4. Fold in the chocolate chips and toffee chips until just combined.
  5. Roll the dough into tablespoon-sized balls and place them on a parchment-lined baking sheet, adding extra chips on top if desired.
  6. Chill the cookie sheet in the freezer for 5-10 minutes.
  7. Bake for 8-10 minutes until the tops are slightly browned, then let them cool on a wire rack.
