Chocolate Toffee Cookies

Ingredients

  • 8 oz bittersweet chocolate, coarsely chopped
  • 2 TBS unsalted butter
  • ¾ cup light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ tsp baking powder
  • tsp salt
  • ¼ cup unbleached all-purpose flour
  • 1 cup toffee bits (chopped up Heath bars)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees and prepare two baking sheets.
  2. Melt the chocolate and butter together in the microwave or over low heat, then let it cool to lukewarm.
  3. In a bowl, beat together the brown sugar, eggs, vanilla, baking powder, and salt.
  4. Mix in the melted chocolate, then stir in the flour, toffee bits, and chocolate chips.
  5. Drop tablespoonfuls of dough onto the prepared baking sheets.
  6. Bake for about 12 minutes until the tops are cracked and dry but still soft.
  7. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a rack to cool completely.
