Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- Whisk together the flour, baking soda, cornstarch, salt, and cinnamon in a bowl.
- In a mixer, beat the butter and brown sugar until light and fluffy.
- Add the egg and vanilla, mixing until combined.
- Gradually add the dry ingredients to the wet mixture and stir in the toffee bits.
- Form tablespoon-sized balls of dough, roll them in brown sugar, and place them on the baking sheet.
- Bake for 10 to 12 minutes until lightly browned.
- Cool on the pan for 2 minutes before transferring to a wire rack.
