Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¾ cup unsalted butter
  • cups dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Heath toffee bits
  • ½ cup extra dark brown sugar for rolling

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. Whisk together the flour, baking soda, cornstarch, salt, and cinnamon in a bowl.
  3. In a mixer, beat the butter and brown sugar until light and fluffy.
  4. Add the egg and vanilla, mixing until combined.
  5. Gradually add the dry ingredients to the wet mixture and stir in the toffee bits.
  6. Form tablespoon-sized balls of dough, roll them in brown sugar, and place them on the baking sheet.
  7. Bake for 10 to 12 minutes until lightly browned.
  8. Cool on the pan for 2 minutes before transferring to a wire rack.
