Instructions
- Preheat the oven to 400°F.
- Prepare a rimmed baking sheet with parchment paper.
- In a medium bowl, combine the fennel wedges, olive oil, garlic powder, thyme, salt, and pepper.
- Toss the mixture to combine thoroughly.
- Arrange the fennel on the prepared baking sheet, spacing them out as much as possible.
- Roast the fennel until tender and starting to brown on the edges, about 30 to 35 minutes, stirring after 15 minutes.
- Garnish with fresh fennel fronds before serving.
