Ingredients

The fennel

  • 2 bulbs fennel

The seasoning

  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • 1 teaspoon minced fresh thyme
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare a rimmed baking sheet with parchment paper.
  3. In a medium bowl, combine the fennel wedges, olive oil, garlic powder, thyme, salt, and pepper.
  4. Toss the mixture to combine thoroughly.
  5. Arrange the fennel on the prepared baking sheet, spacing them out as much as possible.
  6. Roast the fennel until tender and starting to brown on the edges, about 30 to 35 minutes, stirring after 15 minutes.
  7. Garnish with fresh fennel fronds before serving.
