Roasted Balsamic Fennel

Ingredients

The fennel

  • 1 bulb fennel

The dressings and seasonings

  • 1-2 tablespoon honey lime dressing or marinade
  • 1-2 tablespoon balsamic vinegar
  • 1-2 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes

Instructions

  1. Cut the fennel bulb in half with the stem still attached and then cut it into wedges.
  2. Pull off the leaves from the stem and arrange the bulb pieces in a baking dish.
  3. Drizzle the vinegars and honey lime dressing over the fennel wedges.
  4. Sprinkle the minced garlic, black pepper, red pepper flakes, and fennel leaves on top.
  5. Roast in the oven at 400°F for about 12-14 minutes, broiling for the last 2 minutes.
