Ingredients

Dough

  • 2 cups all-purpose flour
  • 1 tsp salt
  • ¼ tsp instant yeast
  • ¾-1 cup water

Caramelized Onions

  • 3 whole yellow onions
  • 2 Tbsp butter

Flatbread Toppings

  • 2 Tbsp olive oil
  • ½ Tbsp Italian seasoning blend
  • ¼ lb. frozen spinach
  • ½ 15 oz. can quartered artichoke hearts
  • 2 oz. feta cheese

Instructions

  1. Prepare the dough the night before by mixing flour, salt, and yeast in a bowl, then adding water until a sticky dough forms. Cover and let sit for 12-24 hours.
  2. The next day, slice the onions and cook them in butter over low heat for about an hour until caramelized.
  3. Preheat the oven to 425°F and prepare a baking sheet with foil and olive oil.
  4. Scrape the fermented dough onto a floured surface and stretch it into a rectangle about 1/4 inch thick.
  5. Spread olive oil and Italian seasoning on the dough, then add the thawed spinach, chopped artichokes, caramelized onions, and crumbled feta.
  6. Bake for 18-20 minutes until the edges are golden brown, then slice and serve.
