Ingredients

The pizza base and sauce

  • 16 oz pizza dough
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • ¾ cup milk
  • ¼ tsp onion powder
  • 1 clove garlic
  • 2 Tbsp extra virgin olive oil

The toppings

  • 8 oz fresh spinach
  • 4 oz provolone cheese
  • 2 oz shredded mozzarella
  • 2 oz finely shredded parmesan cheese
  • 6-8 pieces canned artichoke hearts
  • to taste red pepper flakes

Seasoning

  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 450°F and place a pizza stone inside to heat for 20 minutes.
  2. Shape the pizza dough into a 13-inch round on parchment paper, creating a taller rim, and brush with olive oil.
  3. Sauté ¾ of the spinach in olive oil until wilted, then chop and set aside.
  4. Melt butter in a saucepan, whisk in flour and onion powder, then slowly add milk and cook until thickened.
  5. Remove from heat and stir in minced garlic and the sautéed spinach.
  6. Spread the spinach béchamel sauce over the pizza crust, leaving the rim uncoated.
  7. Top with chopped fresh spinach, provolone, mozzarella, parmesan, and chopped artichokes.
  8. Transfer the pizza to the hot pizza stone and bake for 10-13 minutes until the crust is golden brown.
