Ingredients

The dough

  • ½ recipe homemade pizza dough (or 1 lb. store-bought pizza dough)
  • 1 Tablespoon olive oil, divided
  • 1 Tablespoon cornmeal

The toppings

  • 3 cloves roasted garlic, finely chopped
  • ¼ cup grated or shredded parmesan cheese, plus more for sprinkling on top
  • 2 cups shredded mozzarella cheese
  • 1 can (13 ounces) artichoke hearts, drained and quartered
  • cups fresh spinach
  • to taste optional freshly ground black pepper

Instructions

  1. Prepare the pizza dough and preheat the oven to 475°F (246°C).
  2. Lightly grease a baking sheet or pizza pan with olive oil and sprinkle with cornmeal.
  3. Shape the dough into a 12-inch circle and create a lip around the edges.
  4. Push dents into the dough surface to prevent bubbling and brush with remaining olive oil.
  5. Top the dough with roasted garlic, parmesan cheese, mozzarella cheese, artichokes, and spinach.
  6. Bake for 14–15 minutes until the crust is golden brown.
  7. Slice and serve immediately, storing leftovers in the refrigerator.
