Ingredients

Fathead Pizza Crust

  • 1 ½ cup part skim shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • ¼ cup almond flour
  • 2 tablespoon whey protein powder

Spinach Artichoke Dip

  • 4 oz cream cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 oz frozen spinach
  • 1 can artichoke hearts
  • 1 tablespoon butter
  • ¼ cup onion, finely chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon red wine vinegar
  • ¼ teaspoon white pepper

Additional Cheese

  • ½ cup Monterey Jack Cheese
  • 1 tablespoon mayonnaise

Instructions

  1. Preheat the oven to 400°F.
  2. Melt mozzarella and cream cheese in the microwave until fully melted, stirring in between.
  3. Mix in the egg, then add almond flour and protein powder until thoroughly combined.
  4. Roll out the dough between parchment paper or shape with oiled hands, then place on a sheet pan and bake for 12-15 minutes until browned.
  5. In a pan, melt butter with onions and garlic over medium heat until softened.
  6. Add the cheeses to the pan and melt them together, then stir in spinach and artichokes until combined.
  7. Add red wine vinegar and white pepper, adjust seasoning if necessary.
  8. Use half of the dip mixture, adding 1 tablespoon of mayonnaise to it and refrigerate the rest.
  9. Spread the remaining Monterey Jack cheese over the crust, then spread the spinach artichoke dip on top.
  10. Return to the oven until warmed through.
