Spinach Artichoke Chicken Pizza

Ingredients

The pizza base

  • 1 medium unbaked pizza crust
  • 3 Tbsp. olive oil

The toppings

  • ½ medium white onion, diced
  • 5 cloves garlic, minced
  • 2 cups fresh baby spinach, loosely-packed
  • 2 cups shredded cooked chicken
  • 1 14-ounce jar artichoke hearts, drained and roughly chopped
  • 1–2 cups shredded Mozzarella cheese
  • ½ cup shaved or shredded Parmesan cheese
  • cup toasted pine nuts
  • 1 cup fresh spinach, chopped (optional)

Instructions

  1. Preheat the oven to 425°F.
  2. Brush the unbaked pizza crust with about 2 Tbsp. of olive oil.
  3. In a sauté pan, heat the remaining 1 Tbsp. of olive oil over medium-high heat, add the diced onion, and sauté until translucent.
  4. Add the minced garlic and cook for an additional 2 minutes.
  5. Spread the onion-garlic mixture evenly over the pizza crust, leaving a 1-inch border.
  6. Layer the spinach, artichokes, and chicken evenly on the crust, then sprinkle with Mozzarella cheese.
  7. Bake for 10-12 minutes until the cheese is melted and slightly golden.
  8. Remove from the oven and top with Parmesan, pine nuts, and additional spinach if desired. Serve immediately.
