Spinach Artichoke Chicken Pizza

fresh spinach, chopped (optional)
Instructions
- Preheat the oven to 425°F.
- Brush the unbaked pizza crust with about 2 Tbsp. of olive oil.
- In a sauté pan, heat the remaining 1 Tbsp. of olive oil over medium-high heat, add the diced onion, and sauté until translucent.
- Add the minced garlic and cook for an additional 2 minutes.
- Spread the onion-garlic mixture evenly over the pizza crust, leaving a 1-inch border.
- Layer the spinach, artichokes, and chicken evenly on the crust, then sprinkle with Mozzarella cheese.
- Bake for 10-12 minutes until the cheese is melted and slightly golden.
- Remove from the oven and top with Parmesan, pine nuts, and additional spinach if desired. Serve immediately.
