Ingredients

The crust

  • 1 ½ cup part skim shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • ¼ cup almond flour
  • 2 tablespoon whey protein powder

The spinach artichoke dip

  • 4 oz cream cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 oz frozen spinach (thawed and squeezed dry)
  • 1 can artichoke hearts (13.75 oz)
  • 1 tablespoon butter
  • ¼ cup onion, finely chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon red wine vinegar
  • ¼ teaspoon white pepper

Additional cheese

  • ½ cup Monterey Jack cheese
  • 1 tablespoon mayonnaise

Instructions

  1. Preheat the oven to 400°F.
  2. Microwave mozzarella and cream cheese until melted, stirring in between.
  3. Add the egg and mix well, then incorporate almond flour and protein powder.
  4. Roll out the dough between parchment paper or shape with oiled hands.
  5. Place on a sheet pan and bake for 12-15 minutes until browned.
  6. In a pan, melt butter with onions and garlic over medium heat.
  7. Add cheeses and melt, then stir in spinach and artichokes until combined.
  8. Mix in red wine vinegar and white pepper, adjusting seasoning to taste.
  9. Use half of the dip and stir in mayonnaise, refrigerate the rest.
  10. Spread remaining Monterey Jack cheese over the crust, then add the spinach artichoke dip.
  11. Return to the oven until warmed through.
