Ingredients

Cobbler Batter

  • 4 tablespoons unsalted butter
  • ½ cup Bob’s Red Mill Organic All Purpose Flour
  • ½ cup Bob’s Red Mill Organic Whole Wheat Flour
  • ¾ cup packed light brown sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ½ cup 2% milk
  • 2 tablespoons dark rum
  • 1 teaspoon pure vanilla extract

Topping

  • cup packed brown sugar
  • 1 cup chopped pecans
  • 1 ½ cups very hot water

Serving Suggestions

  • to taste vanilla ice cream or sweetened whipped cream

Instructions

  1. Preheat the oven to 350°F and melt the butter in an 8x8-inch baking dish.
  2. In a mixing bowl, combine the dry ingredients for the batter, then add the milk, rum, and vanilla, stirring until just combined.
  3. In another bowl, mix the brown sugar and pecans for the topping.
  4. Dollop the batter over the melted butter without stirring, then sprinkle the topping over it.
  5. Slowly pour hot water over the entire mixture without stirring.
  6. Place the baking dish on a parchment-lined baking sheet and bake for 30 to 40 minutes until golden brown.
  7. Let cool for 20 to 25 minutes before serving warm with ice cream.
