Watermelon Mint Sorbet

Ingredients

  • 4 pounds watermelon, seeded and scooped into big chunks
  • 1 tablespoon raw (turbinado) sugar
  • 1 teaspoon raw (turbinado) sugar
  • 3 units limes, juiced
  • 3 tablespoons white rum
  • 1 pinch sea salt
  • 1 tablespoon mint, chopped
  • 1 teaspoon mint, chopped

Instructions

  1. Blend watermelon chunks, sugar, lime juice, and rum until smooth.
  2. Add chopped mint and blend until mint is in large flecks.
  3. Chill the mixture in the refrigerator for 30 minutes.
  4. Process the mixture in an ice cream maker according to the manufacturer's instructions.
  5. Transfer to an airtight container and freeze for a few hours before serving.
