Healthy Ground Pork Dinner Casserole

Ingredients

The casserole

  • 2 tbsp ghee (or avocado oil)
  • 1 medium zucchini, spiralized
  • 1 medium sweet potato, spiralized
  • 1 medium regular potato, spiralized
  • 1 medium onion, diced
  • 1.5 lbs ground pork
  • 3 medium green onions, diced
  • to taste none salt and pepper (optional)

The sauce

  • ¼ cup coconut aminos
  • 1 tbsp apple cider vinegar
  • 2 tbsp avocado or olive oil
  • 2 tsp garlic powder
  • 1.5 tsp black pepper
  • ¾ tsp onion powder
  • ¾ tsp paprika
  • ½ tsp sea salt

Instructions

  1. Preheat the oven to 400°F and grease a 9x13 casserole dish with ghee.
  2. Spiralize the zucchini and squeeze out excess moisture using a cheesecloth or paper towels.
  3. Spiralize the sweet potato and regular potato, then dice the onion.
  4. Combine the onion, zucchini, and potato noodles in the casserole dish, tossing with avocado oil and seasoning with salt and pepper.
  5. Break the ground pork into small pieces and nestle them among the noodles.
  6. Roast in the oven for 40-50 minutes, stirring every 10-15 minutes for even cooking.
  7. While the casserole is baking, prepare the sauce by whisking together all sauce ingredients.
  8. Once cooked, remove the casserole from the oven, sprinkle with green onions, pour the sauce over, and toss to combine.
  9. Serve immediately.
