Instructions
- Preheat the oven to 400°F and grease a 9x13 casserole dish with ghee.
- Spiralize the zucchini and squeeze out excess moisture using a cheesecloth or paper towels.
- Spiralize the sweet potato and regular potato, then dice the onion.
- Combine the onion, zucchini, and potato noodles in the casserole dish, tossing with avocado oil and seasoning with salt and pepper.
- Break the ground pork into small pieces and nestle them among the noodles.
- Roast in the oven for 40-50 minutes, stirring every 10-15 minutes for even cooking.
- While the casserole is baking, prepare the sauce by whisking together all sauce ingredients.
- Once cooked, remove the casserole from the oven, sprinkle with green onions, pour the sauce over, and toss to combine.
- Serve immediately.
