Flourless Chocolate Orange Tarts

Instructions
- Preheat the oven to 350°F and lightly grease ramekins, placing them on a baking sheet.
- Melt the chocolate and butter in a double boiler, stirring until smooth, then remove from heat.
- In a separate bowl, whisk the eggs and sugar until thick and frothy, about 1 minute.
- Slowly drizzle the melted chocolate mixture into the egg mixture while whisking constantly, then stir in the orange zest.
- Transfer the batter to the ramekins, filling them 2/3 full, and bake for 25-35 minutes until the tops are set.
- While the tarts cool, prepare the ganache by heating the cream until hot, then stirring in the chocolate until melted and smooth.
- Place about 2 teaspoons of ganache in the center of each tart and set the rest aside for drizzling.
- Before serving, whip the cream with powdered sugar and orange extract until soft peaks form, then add the zest and whip to desired consistency.
- Spoon whipped cream on top of the tarts and drizzle with extra ganache.
