Instructions
- Grate the chocolate and set aside.
- Zest and juice the oranges, setting them aside.
- In a mixing bowl, cream together the butter and sugar.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the sour cream, vanilla, zest, and juice.
- In a separate bowl, combine the flour, baking powder, baking soda, and grated chocolate.
- Mix the dry ingredients into the wet ingredients until just moistened.
- Fill paper-lined muffin cups ¾ full.
- Combine the cream cheese, sugar, and zest until well mixed.
- Place a teaspoon of the cream cheese filling in the center of each muffin and gently press it into the batter.
- Bake at 400°F for 12-17 minutes or until a toothpick comes out clean.
- Remove from oven and let cool in the pan for 5 minutes before transferring to a cooling rack.
