Ingredients

Cabbage Salad

  • 4 cups thinly sliced Chinese cabbage
  • 3 pieces green onions
  • 1 small bell pepper
  • 1 small cucumber
  • 1 small jalapeno
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • ½ cup coarsely chopped peanuts

Soy Ginger Dressing

  • 1 tablespoon sesame oil
  • 2 tablespoons reduced sodium soy sauce
  • 1 piece lime
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon agave syrup (optional)

Instructions

  1. 1. Toss together the cabbage, onions, bell pepper, cucumber, jalapeno, parsley, mint, and peanuts in a large salad bowl.
  2. 2. In a small bowl, whisk together the dressing ingredients: sesame oil, soy sauce, lime juice, ginger, and agave syrup if using.
  3. 3. Gently mix the dressing into the salad and distribute well.
  4. 4. Chill the salad until serving time.
