Spicy Mexican Mashed Potatoes

Ingredients

The potatoes

  • 2 pounds gold potatoes or Russet potatoes

The mix-ins

  • 1 4-ounce can diced or chopped green chiles
  • ¼ cup regular dairy milk or unsweetened dairy-free milk
  • 2 tablespoons butter or ghee
  • 2 teaspoons taco seasoning
  • ½ teaspoon salt

The toppings

  • 2 tablespoons chopped fresh chives
  • ½ cup shredded Monterey Jack cheese (optional)

Instructions

  1. Peel and quarter the potatoes, then add them to a pot and cover with water.
  2. Cover and cook on high heat until boiling, then reduce to medium and simmer until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add green chiles, milk, butter, taco seasoning, and salt to the potatoes.
  5. Mash the mixture until fully incorporated and serve warm, topped with chives and cheese if desired.
