Instructions
- Peel and quarter the potatoes, then add them to a pot and cover with water.
- Cover and cook on high heat until boiling, then reduce to medium and simmer until tender.
- Drain the potatoes and return them to the pot.
- Add green chiles, milk, butter, taco seasoning, and salt to the potatoes.
- Mash the mixture until fully incorporated and serve warm, topped with chives and cheese if desired.
