Ingredients

The meat

  • 3-4 pounds skinless pork belly

The seasoning

  • to taste salt
  • to taste pepper
  • cups BBQ sauce
  • to taste Creole seasoning

Instructions

  1. Trim the excess skin from the pork belly but leave some fat.
  2. Score the pork with shallow diagonal cuts to create a crisscross pattern.
  3. Season the pork belly with salt and pepper on both sides.
  4. Apply your favorite seasoning, preferably a homemade Creole seasoning.
  5. Preheat the smoker to 225°F (107°C).
  6. Place the pork in the smoker, close the lid, and start cooking.
  7. Baste the pork with oil occasionally.
  8. Remove the pork from the smoker when the internal temperature reaches 165°F (75°C), which takes about 3 to 4 hours.
  9. Slice the pork into bite-sized pieces and serve.
