Instructions
- Trim the excess skin from the pork belly but leave some fat.
- Score the pork with shallow diagonal cuts to create a crisscross pattern.
- Season the pork belly with salt and pepper on both sides.
- Apply your favorite seasoning, preferably a homemade Creole seasoning.
- Preheat the smoker to 225°F (107°C).
- Place the pork in the smoker, close the lid, and start cooking.
- Baste the pork with oil occasionally.
- Remove the pork from the smoker when the internal temperature reaches 165°F (75°C), which takes about 3 to 4 hours.
- Slice the pork into bite-sized pieces and serve.
