Ingredients

The meat

  • 2 lbs pork belly

The seasoning

  • 1 tablespoon kosher salt
  • 1 teaspoon white pepper or black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground sage

The oil and sauce

  • 1 tablespoon olive oil or your favorite oil
  • 1 cup barbecue sauce

Instructions

  1. Preheat the smoker to 250°F.
  2. Fill the smoke tube with your favorite wood chips.
  3. In a small bowl, combine kosher salt, white pepper, ground sage, and garlic powder, then set aside.
  4. Cut the pork belly into one-inch cubes.
  5. Place the cubed pork belly in a disposable pan and coat with olive oil.
  6. Add the seasoning blend to the pork belly and mix well.
  7. Place the pan in the smoker and cook for 4.5 to 5 hours until the internal temperature reaches 200°F.
  8. After reaching 200°F, remove the pan and toss the pork belly with barbecue sauce.
  9. Return the pan to the smoker for an additional hour to crisp up.
  10. Let the pork belly sit for 10 minutes before serving.
