Instructions
- Preheat the smoker to 250°F.
- Fill the smoke tube with your favorite wood chips.
- In a small bowl, combine kosher salt, white pepper, ground sage, and garlic powder, then set aside.
- Cut the pork belly into one-inch cubes.
- Place the cubed pork belly in a disposable pan and coat with olive oil.
- Add the seasoning blend to the pork belly and mix well.
- Place the pan in the smoker and cook for 4.5 to 5 hours until the internal temperature reaches 200°F.
- After reaching 200°F, remove the pan and toss the pork belly with barbecue sauce.
- Return the pan to the smoker for an additional hour to crisp up.
- Let the pork belly sit for 10 minutes before serving.
