The pan sauce

Instructions
- Cut the pork belly into 1 ½” pieces and toss them in olive oil.
- Add the BBQ rub to the pork belly pieces and ensure they are fully coated.
- Smoke the pork belly at 250°F for 2 hours until the fat renders and a crust forms.
- Place the smoked pork belly in the foil pan and combine BBQ sauce, bourbon, molasses, and hot sauce, then pour over the pork.
- Cover with foil and smoke for another 2 hours.
- Remove the foil and cook uncovered for an additional 30 minutes to thicken the sauce.
