Ingredients

The pork belly

  • 5 lbs pork belly, cubed into 1 ½” pieces
  • 1 tbsp olive oil
  • 1 cup All Purpose BBQ Rub

The pan sauce

  • 1 cup BBQ Sauce
  • 1 tbsp bourbon
  • 2 tbsp molasses
  • 1 dash hot sauce
  • 3 tbsp butter

Other

  • 1 large aluminum foil pan

Instructions

  1. Cut the pork belly into 1 ½” pieces and toss them in olive oil.
  2. Add the BBQ rub to the pork belly pieces and ensure they are fully coated.
  3. Smoke the pork belly at 250°F for 2 hours until the fat renders and a crust forms.
  4. Place the smoked pork belly in the foil pan and combine BBQ sauce, bourbon, molasses, and hot sauce, then pour over the pork.
  5. Cover with foil and smoke for another 2 hours.
  6. Remove the foil and cook uncovered for an additional 30 minutes to thicken the sauce.
