Instructions
- Cut the pork belly into 1-inch cubes and toss them in olive oil, salt, and pepper.
- In a saucepan, combine the remaining sauce ingredients over medium-low heat and whisk until dissolved, then remove from heat.
- Prepare your smoker for indirect cooking at 275°F.
- Smoke the pork belly cubes fat side down until they reach an internal temperature of around 190°F, which takes about 2-3 hours.
- Remove the smoked cubes and place them in an aluminum pan, then toss with the Char Siu sauce to coat.
- Return the pan to the smoker and cook uncovered for an additional hour or until the sauce reduces.
- Plate the burnt ends and enjoy.
