Ingredients

The pork belly

  • 3 lbs skinless pork belly
  • tsp kosher salt
  • ½ tsp black pepper
  • 1 Tbsp olive oil

The Char Siu sauce

  • 4 Tbsp tamari
  • 2 Tbsp natural smooth peanut butter
  • 4 Tbsp Sukrin Gold sugar substitute
  • 1 Tbsp oyster sauce
  • 4 tsp rice wine
  • 1 tsp smoked paprika
  • 3 tsp sesame oil
  • 1 tsp Louisiana hot sauce
  • 1 tsp ginger powder
  • 1 tsp garlic powder
  • ½ tsp 5-spice powder

Other

  • 1 ½ pan aluminum foil
  • 4 chunks smoking wood of choice

Instructions

  1. Cut the pork belly into 1-inch cubes and toss them in olive oil, salt, and pepper.
  2. In a saucepan, combine the remaining sauce ingredients over medium-low heat and whisk until dissolved, then remove from heat.
  3. Prepare your smoker for indirect cooking at 275°F.
  4. Smoke the pork belly cubes fat side down until they reach an internal temperature of around 190°F, which takes about 2-3 hours.
  5. Remove the smoked cubes and place them in an aluminum pan, then toss with the Char Siu sauce to coat.
  6. Return the pan to the smoker and cook uncovered for an additional hour or until the sauce reduces.
  7. Plate the burnt ends and enjoy.
