Ingredients

The Pork Belly

  • 4-5 pounds pork belly

The Seasoning

  • 1 teaspoon olive oil
  • 1 cup BBQ sauce
  • ¼ cup apple cider vinegar
  • 2 teaspoons brown sugar or sweetener
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the smoker to 225 degrees.
  2. Drizzle the pork belly with olive oil and coat it with the seasoning mix.
  3. Place the pork belly on the smoker grates.
  4. Smoke for 2-3 hours until the internal temperature reaches around 165 degrees.
  5. Remove the burnt ends and place them in a pan, drizzle with BBQ sauce and apple cider vinegar, and stir.
  6. Return the burnt ends to the smoker and smoke until they reach an internal temperature of 195-205 degrees.
  7. Allow the pork to rest for 10-15 minutes before serving.
