Ingredients

Pico de Gallo

  • 2 large tomatoes
  • 1 large bunch Cilantro
  • 1 large sweet onion
  • 1 unit lime
  • 1-2 unit Jalapeno peppers or other hot pepper
  • to taste unit Kosher salt

Guacamole

  • 4 ripe avocados
  • 1 cup Pico de Gallo
  • to taste unit Kosher salt

7 Layer Dip

  • ½ cup spinach greens
  • 1 can black beans
  • to taste unit olive oil
  • to taste unit Kosher salt
  • to taste unit cumin
  • 1 package taco seasoning
  • 1 unit vegan sour cream
  • 1 unit Vegan cheese sauce
  • to taste unit green onions

Instructions

  1. Finely chop the onion, tomatoes, and hot pepper, removing seeds for less heat.
  2. Roughly chop the cilantro and mix it with the chopped ingredients in a bowl.
  3. Squeeze lime juice over the mixture and season with kosher salt to taste.
  4. For guacamole, cut avocados in half, remove pits, and mash the flesh.
  5. Mix in 1 cup of Pico de Gallo and season with kosher salt.
  6. For the 7 layer dip, chop spinach and combine black beans with olive oil, salt, and cumin, processing until chunky.
  7. Mix vegan sour cream with taco seasoning.
  8. Layer the ingredients in a dish, starting with the black bean mixture, followed by guacamole, and other toppings as desired.
