Instructions
- Finely chop the onion, tomatoes, and hot pepper, removing seeds for less heat.
- Roughly chop the cilantro and mix it with the chopped ingredients in a bowl.
- Squeeze lime juice over the mixture and season with kosher salt to taste.
- For guacamole, cut avocados in half, remove pits, and mash the flesh.
- Mix in 1 cup of Pico de Gallo and season with kosher salt.
- For the 7 layer dip, chop spinach and combine black beans with olive oil, salt, and cumin, processing until chunky.
- Mix vegan sour cream with taco seasoning.
- Layer the ingredients in a dish, starting with the black bean mixture, followed by guacamole, and other toppings as desired.
