Instructions
- Make the cashew cream by blending cashews, water, olive oil, lemon juice, and sea salt until creamy, then chill.
- Prepare the spiced quinoa by mixing cooked quinoa with garlic, chili powder, smoked paprika, cumin, lime juice, olive oil, sea salt, and maple syrup, then chill.
- In a serving tray, layer the refried beans, guacamole, cashew cream, and spiced quinoa.
- Top the layers with cherry tomatoes, scallions, cilantro, additional cashew cream, and jalapeños if desired.
- Serve with tortilla chips.
