Ingredients

The base layers

  • 1 can refried beans
  • cups homemade refried beans
  • 1 cup Kale Guacamole or classic guacamole
  • 1 cup halved cherry tomatoes
  • ½ bunch scallions
  • ½ cup cilantro
  • 1 piece jalapeño (optional)

Cashew Cream

  • 1 cup raw cashews
  • ½ cup water
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon sea salt

Spiced Quinoa

  • cups cooked red quinoa
  • 1 clove garlic (minced)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ tablespoon fresh lime juice
  • 1 teaspoon extra-virgin olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon maple syrup

To serve

  • as needed serving tortilla chips

Instructions

  1. Make the cashew cream by blending cashews, water, olive oil, lemon juice, and sea salt until creamy, then chill.
  2. Prepare the spiced quinoa by mixing cooked quinoa with garlic, chili powder, smoked paprika, cumin, lime juice, olive oil, sea salt, and maple syrup, then chill.
  3. In a serving tray, layer the refried beans, guacamole, cashew cream, and spiced quinoa.
  4. Top the layers with cherry tomatoes, scallions, cilantro, additional cashew cream, and jalapeños if desired.
  5. Serve with tortilla chips.
