Ingredients

Dressing

  • 2 medium limes (zest and juice)
  • 2 tablespoons honey
  • ¼ cup olive oil
  • ¼ teaspoon coarse salt
  • ¼ teaspoon freshly ground black pepper

Salad

  • 1 medium cantaloupe (about 3 pounds)
  • 1 medium English cucumber
  • ½ medium jalapeno (optional)
  • 1 cup crumbled feta cheese
  • ½ cup roasted pistachios (chopped or crushed)
  • ¼ cup fresh mint (roughly chopped)
  • ¼ cup fresh basil (roughly chopped)

Instructions

  1. Whisk together the dressing ingredients in a large bowl until combined. Adjust seasoning if needed.
  2. Add the cantaloupe, cucumber, and jalapeno to the bowl and toss to coat.
  3. Transfer the mixture to a serving platter or bowl.
  4. Garnish with feta, pistachios, mint, and basil.
  5. Refrigerate for 30 minutes before serving.
