Grilled Portobello Pizzas

Ingredients

The base

  • 4 large Portobello mushrooms caps, stems removed

The toppings

  • 8 oz cheese (mozzarella, provolone or your favorite Italian cheese)
  • 1 12 oz package chicken sausage
  • 1 cup marinara sauce
  • 1 tbsp chopped sundried tomatoes (optional)
  • ΒΌ cup spinach leaves (optional)
  • 1 tbsp fresh basil torn into small pieces

Instructions

  1. Preheat the grill to medium.
  2. Rinse and dry the Portobello caps.
  3. Layer 2 tbsp of marinara sauce on each mushroom cap, bottom side up.
  4. Add two slices of cheese to each cap.
  5. Grill the sausage until char marks form on both sides.
  6. Place the mushroom pizzas on a large double layer piece of foil.
  7. Put the foil with mushroom pizzas on the grill and heat until the cheese melts and the sauce bubbles (about 6-8 minutes).
  8. Remove the mushrooms and sausage from the grill.
  9. Slice the sausage and layer it on top of the pizzas.
  10. Sprinkle the chopped sundried tomatoes, spinach, and basil on the pizzas.
  11. Serve with an arugula salad for a light meal.
