Ingredients

The base

  • 6 large portobello mushrooms

The toppings

  • 6 teaspoons olive oil
  • 12 slices fresh mozzarella
  • 1 cup cherry tomatoes
  • 3–4 cloves garlic
  • ½ cup basil
  • 1 pinch salt

Instructions

  1. Preheat the oven to 400°F.
  2. Place portobello mushrooms bottom side up on a baking sheet.
  3. Brush each portobello mushroom with olive oil.
  4. Sprinkle minced garlic on each mushroom.
  5. Add two slices of mozzarella on each mushroom.
  6. Distribute cherry tomatoes evenly on the mushrooms and add a pinch of salt.
  7. Bake for 10-12 minutes until cheese is melted.
  8. Remove from oven and sprinkle with basil before serving.
