Ingredients

The sauce

  • ¼ cup olive oil
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp dried thyme
  • ¼ tsp dried rosemary
  • 1 pinch crushed red pepper
  • ½ tsp salt
  • 3 oz tomato paste
  • ½ tsp honey

The pizza

  • 1 large pizza dough
  • 1 Tbsp olive oil
  • 1 cap portobello mushroom
  • 4 oz shredded mozzarella
  • 2 oz feta, crumbled
  • 1 handful chopped parsley (optional)

Instructions

  1. Prepare the (Not) Sun Dried Tomato Sauce by heating olive oil, garlic, herbs, salt, and pepper in a skillet for a few minutes.
  2. Add tomato paste and honey to the skillet, stir, and cook until the mixture darkens slightly.
  3. Clean and slice the portobello mushroom, then sauté in olive oil with salt and pepper until softened.
  4. Preheat the oven to 500ºF and stretch the pizza dough to fit the pan.
  5. Spread the sauce over the dough, then top with mozzarella, cooked mushrooms, and feta.
  6. Bake for 7-10 minutes until the cheese is bubbly and slightly browned.
  7. Optionally, add chopped parsley before slicing the pizza into pieces and serving.
