Halloumi Kebabs

Ingredients

Marinade

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Za’atar
  • ¼ teaspoon crushed red pepper
  • to taste salt
  • to taste pepper

Kebabs

  • 8 ounces Halloumi
  • 1 cup grape tomatoes
  • 1 medium red pepper, cut into 1-inch squares
  • 1 medium red onion, cut into wedges
  • 8 skewers

Instructions

  1. Soak the skewers in water for at least 20 minutes.
  2. Combine olive oil, lemon juice, parsley, Za’atar, crushed red pepper, salt, and pepper in a blender and process until smooth.
  3. Cut the Halloumi into cubes and place in a shallow dish, then pour the marinade over it.
  4. Marinate the Halloumi for at least 30 minutes, or up to overnight in the fridge.
  5. Add tomatoes, red pepper, and red onion to the dish with the marinade and let sit at room temperature for 15 minutes.
  6. Thread the Halloumi, tomatoes, red pepper, and red onion onto the soaked skewers.
  7. Preheat a grill or grill pan to medium-high and lightly brush with oil.
  8. Grill the kebabs for about 1 ½ minutes per side until the cheese is lightly charred.
