Grilled Halloumi Cheese

Ingredients

The cheese and marinade

  • 8 ounces halloumi cheese
  • tablespoons extra virgin olive oil
  • ½ teaspoon dried oregano
  • 1 lemon halved
  • teaspoons fresh thyme

Optional serving

  • to taste pita bread

Instructions

  1. Preheat the grill to medium-high and ensure it's clean.
  2. Mix 1½ tablespoons of olive oil with oregano in a small bowl.
  3. Slice the halloumi cheese into 1/3 to 1/2-inch slices.
  4. Brush both sides of the halloumi with the marinade.
  5. Generously oil the grill grates.
  6. Grill the halloumi for 2 to 6 minutes, turning occasionally until grill marks appear.
  7. Grill the lemon halves cut-side down until grill marks appear.
  8. Transfer the grilled halloumi and lemon to a platter.
  9. Drizzle the remaining olive oil over the cheese, squeeze the grilled lemon on top, and sprinkle with thyme.
  10. Serve warm with pita or as desired.
