Grilled Halloumi Cheese

The cheese and marinade

halloumi cheese

extra virgin olive oil

dried oregano

fresh thyme

Instructions
- Preheat the grill to medium-high and ensure it's clean.
- Mix 1½ tablespoons of olive oil with oregano in a small bowl.
- Slice the halloumi cheese into 1/3 to 1/2-inch slices.
- Brush both sides of the halloumi with the marinade.
- Generously oil the grill grates.
- Grill the halloumi for 2 to 6 minutes, turning occasionally until grill marks appear.
- Grill the lemon halves cut-side down until grill marks appear.
- Transfer the grilled halloumi and lemon to a platter.
- Drizzle the remaining olive oil over the cheese, squeeze the grilled lemon on top, and sprinkle with thyme.
- Serve warm with pita or as desired.
