Grilled Halloumi and Vegetables

Instructions
- 1. Preheat the grill.
- 2. In a large bowl, combine all the vegetables with garlic, Italian seasoning, olive oil, balsamic vinegar, salt, and pepper.
- 3. Using a grill basket, grill the vegetables until softened and lightly charred, stirring often, for about 10 minutes.
- 4. Remove the vegetables from the heat.
- 5. Grill the halloumi slices for 2-3 minutes on each side until grill marks appear and the texture is slightly soft.
- 6. Serve the grilled halloumi and vegetables over fresh salad greens, adding extra olive oil and balsamic vinegar if desired.
