Grilled Halloumi and Vegetables

Ingredients

  • 8 oz halloumi cheese, cut into ½" thick slices
  • 1 unit red bell pepper, sliced
  • 1 cup white mushrooms, sliced
  • 1 unit onion, peeled and sliced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning or herbs of choice
  • 3 tbsp olive oil, plus extra for serving
  • 2 tbsp balsamic vinegar, plus extra for serving
  • to taste unit salt and pepper
  • 2 cups salad greens for serving

Instructions

  1. 1. Preheat the grill.
  2. 2. In a large bowl, combine all the vegetables with garlic, Italian seasoning, olive oil, balsamic vinegar, salt, and pepper.
  3. 3. Using a grill basket, grill the vegetables until softened and lightly charred, stirring often, for about 10 minutes.
  4. 4. Remove the vegetables from the heat.
  5. 5. Grill the halloumi slices for 2-3 minutes on each side until grill marks appear and the texture is slightly soft.
  6. 6. Serve the grilled halloumi and vegetables over fresh salad greens, adding extra olive oil and balsamic vinegar if desired.
