Grilled Halloumi and Summer Veggie Foil Packets

Instructions
- Preheat the grill over medium-high heat.
- In a large bowl, combine halloumi, onion, zucchini, peppers, potatoes, olive oil, basil, parsley, rosemary, garlic, salt, and pepper.
- Cut out 4 rectangles of aluminum foil and double line two of them.
- Divide the vegetable mixture evenly between the foil pieces, leaving a border around the edges.
- Cover the veggies with smaller pieces of foil and seal the packets tightly.
- Place the packets on the grill and cook for 15 to 20 minutes.
- Carefully open the packets, sprinkle with walnuts, and adjust seasoning if needed.
