Grilled Halloumi and Summer Veggie Foil Packets

Ingredients

The vegetables and cheese

  • 8 ounces halloumi cheese
  • 1 onion
  • 1 zucchini
  • 2 red bell peppers
  • 2 medium yukon potatoes

The seasoning and oil

  • 3 tablespoons olive oil
  • 3 tablespoons fresh basil
  • 1 tablespoon fresh parsley
  • 1 ½ tablespoons fresh rosemary
  • 2 cloves garlic
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup raw walnuts

Instructions

  1. Preheat the grill over medium-high heat.
  2. In a large bowl, combine halloumi, onion, zucchini, peppers, potatoes, olive oil, basil, parsley, rosemary, garlic, salt, and pepper.
  3. Cut out 4 rectangles of aluminum foil and double line two of them.
  4. Divide the vegetable mixture evenly between the foil pieces, leaving a border around the edges.
  5. Cover the veggies with smaller pieces of foil and seal the packets tightly.
  6. Place the packets on the grill and cook for 15 to 20 minutes.
  7. Carefully open the packets, sprinkle with walnuts, and adjust seasoning if needed.
