Ingredients

The marinade

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 4 cloves garlic (minced)
  • teaspoon Italian seasoning
  • ½ teaspoon salt
  • to taste pepper

The main ingredients

  • pounds chicken (or beef, or other combination)
  • 1 each bell pepper (cut into 1" dice, any color)
  • 1 each onion (cut into 1" dice, preferably red)
  • 2 small zucchini (cut into 1" dice)
  • 1 medium potato (cut into ¼" to ½" dice)
  • 8 oz mushrooms (baby bella or white button, left whole)
  • 1 each jalapeño (diced small, optional)

Instructions

  1. Whisk together the olive oil, vinegar, garlic, and spices in a medium bowl.
  2. Prepare 8 large pieces of foil, laying them out double stacked to form 4 grill packets.
  3. Distribute the diced meat and veggies evenly on each stack of foil and flatten them out.
  4. Sprinkle with salt and pepper, then drizzle the marinade over the top.
  5. Fold the foil packets securely to prevent any ashes from entering.
  6. Let the food marinate for 1 to 2 hours.
  7. Grill the packets over an open fire, flipping once, until the meat is cooked to your liking, about 20 to 25 minutes.
  8. Carefully open each packet to release steam before serving.
