Grilled BBQ Hawaiian Chicken in Foil Packets

Ingredients

The chicken and vegetables

  • 4 pieces boneless skinless chicken breast
  • to taste salt & pepper
  • 1 piece red pepper, cut into large cubes
  • 1 piece zucchini, cut into ½” slices
  • ½ piece red onion, cut into large cubes
  • 8 slices pineapple (fresh or canned)
  • ¼ cup sliced green onion
  • to taste chopped parsley (optional, for garnish)

Hawaiian BBQ Sauce

  • ½ cup favorite BBQ sauce
  • ¼ cup pineapple juice
  • 2 tablespoons tamari (or soy sauce)
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground clove
  • 2 cloves garlic, minced

Instructions

  1. Preheat the grill to medium-high heat, about 375-400°F.
  2. In a small bowl, combine BBQ sauce, pineapple juice, tamari sauce, smoked paprika, ground clove, and minced garlic; whisk together.
  3. Lay out 4 sheets of heavy-duty tin foil, each about 1 foot long.
  4. Place a chicken breast in the center of each foil sheet and divide the vegetables and pineapple slices among the packets.
  5. Brush each chicken breast with half of the Hawaiian BBQ sauce.
  6. Seal the foil packets tightly around the chicken and vegetables.
  7. Place the packets on the grill and cook for 13-15 minutes, or until the internal temperature of the chicken reaches 165°F.
  8. Remove from the grill and let rest. Brush with remaining sauce before serving and garnish with chopped green onions and parsley.
