Asian Chicken Foil Packets

Ingredients

The Sauce

  • ¼ cup lite soy sauce or Tamari
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • ½ teaspoon Sriracha sauce

The Chicken and Vegetables

  • 1 pound boneless skinless chicken breasts, cut into bite-size pieces
  • cups broccoli florets
  • 1 large red bell pepper, cored and sliced into strips
  • 1 large yellow bell pepper, cored and sliced into strips
  • 2 large carrots, sliced
  • 1 small red onion, sliced

Instructions

  1. Preheat the grill to medium heat.
  2. Whisk together all sauce ingredients in a small bowl.
  3. Marinate the chicken in half of the sauce while preparing the vegetables.
  4. Cut 8 sheets of heavy duty aluminum foil and layer them to make 4 packets.
  5. Coat the vegetables with the remaining sauce in a bowl.
  6. Distribute the marinated chicken evenly into the foil packets.
  7. Top the chicken with the coated vegetables and spoon any extra sauce over them.
  8. Seal the foil packets tightly and place them on the grill.
  9. Cook for 17-20 minutes until the chicken is cooked through and vegetables are tender.
  10. Remove the packets from the grill and serve warm.
