Mushroom Foil Pack

Ingredients

The mushrooms

  • 1 lb sliced baby bella (or button) mushrooms

The seasoning

  • 2 tbsp extra-virgin olive oil
  • 2 large cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp freshly ground black pepper
  • ¼ tsp salt
  • to taste chopped parsley, to garnish

Instructions

  1. Preheat the outdoor grill to high heat, about 500°F.
  2. Place a large piece of heavy duty aluminum foil (18" x 36") on your work surface.
  3. Put the sliced mushrooms in the center of the foil.
  4. In a small container, combine olive oil, minced garlic, oregano, black pepper, and salt; whisk and drizzle over the mushrooms.
  5. Fold the foil over the mushrooms and seal the edges by folding them toward the center at least twice.
  6. Pierce a few holes on top of the foil pack with a fork.
  7. Place the packet on the grill, pierced side up, close the lid, and cook for 8 minutes.
  8. Flip the pouch so the holes are on the bottom and continue cooking for an additional 2 to 3 minutes.
  9. Remove the pouch from the grill, carefully cut open the foil, garnish with chopped parsley, and serve.
