Ingredients

The marinade

  • ½ cup avocado oil
  • 3 tablespoons lemon juice
  • 6 cloves garlic
  • ½ teaspoon Kosher salt
  • 1 tablespoon Fines Herbes seasoning

The mushrooms

  • 3 large portobello mushrooms

Instructions

  1. Prepare the mushroom caps by removing the stems and gills.
  2. Combine avocado oil, lemon juice, garlic, seasoning, and salt in a large Ziploc bag.
  3. Add the mushrooms to the marinade and let them sit for an hour.
  4. Preheat the oven to 400°F before the hour is up.
  5. Remove the caps from the marinade, wrap each in foil, and place on a foil-lined baking tray.
  6. Bake in the oven for 25 minutes.
  7. Remove from the oven and let the caps rest in the foil for 10-15 minutes.
  8. Slice the mushrooms and use the reserved juices as a sauce.
