Roasted Portobello Mushrooms

Ingredients

The mushrooms

  • 4 large Portobello mushrooms

The seasoning

  • to taste melted ghee, melted coconut oil, or your favorite fat
  • to taste Kosher salt
  • to taste Freshly ground pepper
  • to taste Sunny Paris seasoning or your favorite chopped fresh herbs (optional)
  • to taste Lemon or lime juice or your favorite vinegar

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet lined with aluminum foil.
  2. Remove the stems from the mushrooms and scrape out the gills.
  3. Flip the mushroom caps gill-side down and cut a shallow 'X' on top.
  4. Brush both sides of the caps with melted fat and season with salt and pepper.
  5. Sprinkle seasoning on the caps and place them gill-side up on the baking tray.
  6. Roast for 10 minutes, then flip and roast for another 10 minutes.
  7. If serving as a side, slice the mushrooms and squeeze lemon juice over them; if using as buns, serve whole.
