melted ghee, melted coconut oil, or your favorite fat

Sunny Paris seasoning or your favorite chopped fresh herbs (optional)

Lemon or lime juice or your favorite vinegar
Instructions
- Preheat the oven to 400°F and prepare a baking sheet lined with aluminum foil.
- Remove the stems from the mushrooms and scrape out the gills.
- Flip the mushroom caps gill-side down and cut a shallow 'X' on top.
- Brush both sides of the caps with melted fat and season with salt and pepper.
- Sprinkle seasoning on the caps and place them gill-side up on the baking tray.
- Roast for 10 minutes, then flip and roast for another 10 minutes.
- If serving as a side, slice the mushrooms and squeeze lemon juice over them; if using as buns, serve whole.
