Ingredients

The mushrooms

  • 3 pieces portobello mushrooms (stems removed)

The marinade

  • 3 tablespoons tamari (gluten-free soy sauce)
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic (minced)
  • 1 teaspoon fresh sage (minced)
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Clean the mushroom caps and remove the stems.
  2. In a bowl, mix tamari, balsamic vinegar, minced garlic, sage, and thyme.
  3. Arrange the mushrooms in a baking dish and pour the marinade over them, ensuring both sides are coated.
  4. Let the mushrooms marinate for 15 minutes while preheating the oven to 400ºF.
  5. Bake the mushrooms stem-side up for 15 minutes, then flip and bake for another 15 minutes.
  6. Allow the mushrooms to cool slightly before serving with side dishes.
